“Carrot Fries” - Roasted Carrots with Garlic and Herbs

Ingredients

1 pound carrots, peeled and cut into sticks

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1/2 teaspoon ground black pepper

1/2 teaspoon salt (or to taste)

Fresh parsley, chopped (for garnish)

Directions

Preheat the Toaster Oven: Preheat your toaster oven to 400°F. If your toaster oven has a convection setting, you can use it for more even cooking.

Prepare the Carrots: In a mixing bowl, combine the carrot sticks with olive oil, minced garlic, dried thyme, dried rosemary, ground black pepper, and salt. Toss until the carrots are well coated.

Arrange the Carrots: Place a piece of aluminum foil or parchment paper on the toaster oven baking tray. Spread the carrots in a single layer on the tray. Try not to overcrowd them to ensure even roasting.

Roast the Carrots: Place the tray in the toaster oven and roast for 20-25 minutes, turning the carrots halfway through the cooking time. Keep an eye on them to avoid burning, as toaster ovens can cook faster than regular ovens.

Check for Doneness: The carrots should be tender and slightly caramelized around the edges. If needed, add a few more minutes, but be mindful of the small cooking space in the toaster oven, which can cause things to cook quickly.

Serve: Once done, remove the carrots from the toaster oven, transfer them to a serving dish, and garnish with freshly chopped parsley.
