Classic Apple Fritters

1 teaspoon apple pie spice (or cinnamon)
2 large eggs (beaten)
¾ cup milk
1 teaspoon vanilla extract
2 cups finely chopped apple
Cooking oil
1 cup powdered sugar
2-3 tablespoons milk
Directions
Add your preferred cooking oil to a large fry pan, enough that it's about 1 1/2 inches deep. Line a plate with paper towels and set it aside for now.
In a medium-sized mixing bowl, combine your dry ingredients: flour, brown sugar, baking powder, salt, and spice. Then gently stir in your wet ingredients: beaten eggs, milk, and vanilla extract. Don't overmix, just stir until you see no visible streaks of flour or other ingredients. Carefully fold in the apples until well-distributed.
Heat the pan over medium heat, and let the oil reach 350-375 degrees.* Using a 1/4-cup measuring spoon, drop fritters into the oil (probably 3-6 at a time, depending on the size of your pan). Gently spread or flatten them out a little as you go. Leave space between them, otherwise they'll stick together. Cook for about 2 1/2 minutes, then flip and continue cooking another 2-3 minutes until the fritter is golden brown.
Remove golden brown fritters from the oil and transfer to the paper towel lined plate to cool. Continue cooking until all batter is finished.
In a small bowl, mix the powdered sugar and 2 tablespoons of milk. Stir until it reaches a smooth, drizzly consistency. Add a touch more milk if you want it thinner, then drizzle over the dessert for the perfect glazed apple fritters.
