Soft Steamed Buns with Pork Filling

4 cups ground pork (900g)
2 tbsp light soy sauce (30g)
1 tbsp dark soy sauce (15g)
1 tsp oyster sauce (6g)
1 tsp salt (6g)
1/8 tsp white pepper
1 tbsp sugar (12g)
1 ½ tbsp hot oil (22g)
Dough:
6 1/4 cups all-purpose flour (780g)
1 ½ tsp instant dry yeast (4.5g)
2 tbsp lard (28g)
2 to 6 tbsp sugar (25g to 75g, adjust to taste)
1 ½ cups warm water (360g)
2 tsp baking powder (8g)
Directions
Combine and knead the dough ingredients until smooth and no longer sticky. Cover and let it rest in a warm place for 1 hour.
Divide the dough into equal pieces. Roll each piece out, add the filling, and let the buns sit for 20-30 minutes until they become puffy.
Once the water boils, steam the buns for 20-25 minutes or until cooked.
