Taco Hashbrown Casserole

2 lbs Lean Ground Beef (96/4) (908g)
1 (32 oz) Bag Frozen Hash Browns (907g)
1 (15 oz) Can Black Beans, Drained
1 (15 oz) Can Corn, Drained
1 Red Bell Pepper (150g)
1 Small Yellow Onion (150g)
1 Cup 0% Greek Yogurt (250g)
1 Cup Salsa (240g)
1 Packet Taco Seasoning (or ~2 Tbsp)
2 Cups Reduced-Fat Mexican Cheese, Shredded (226g)
1 tsp Salt
1 tsp Black Pepper
Directions
1.) Preheat oven to 400°F. Cook ground beef with diced onion and bell pepper 6–8 mins, season, and drain.
2.) Spread hash browns in a 9x13 dish. Mix beef mixture with beans, corn, Greek yogurt, salsa, taco seasoning, and half the cheese.
3.) Spread over hash browns, top with remaining cheese, cover, and bake 30–35 mins. Uncover and bake 10–15 mins until melted/browned.
4.) Cool 5–10 mins, divide into 6 servings.
