1 lb (450g) boneless, skinless chicken breast, cut into 1-inch cubes
1 cup broccoli florets
1 medium zucchini, chopped into half-moons
1 medium red bell pepper, chopped
1/2 large onion, chopped
2 tbsp olive oil
4 cloves garlic, minced
1 tbsp Italian seasoning (or a blend of oregano, thyme, garlic powder, onion powder)
1/2 tsp salt
1/4 tsp black pepper
Optional) 1/2 tsp red chili pepper flakes for heat, and fresh parsley for garnish
Directions
Preheat the air fryer to 400°F (200°C).
Combine the chicken and all chopped vegetables in a large mixing bowl.
Season the mixture by drizzling with olive oil and sprinkling with Italian seasoning, salt, pepper, and garlic. Toss everything well to ensure an even coat.
Cook in the preheated air fryer basket in a single layer, likely in two batches to avoid overcrowding.
Air fry for 10-12 minutes, shaking the basket halfway through the cooking time.
Verify the chicken is fully cooked (internal temperature of 165°F or 74°C) and the vegetables are tender.
Serve hot, garnished with fresh parsley or red chili flakes if desired.
