Taiwanese 3 Cup Chicken

750g chicken thighs, deboned and cut into chunks
3 slices of ginger
3 cloves of garlic
3 dried Chinese red chillies, or sub with 1 tsp chilli flakes
2 tbsp light soy sauce a
2 tbsp Chinese cooking wine
2 tbsp sesame oil
1 tbsp dark soy sauce
Directions
Sauté ginger, garlic and add chili peppers until fragrant, then add chicken until browned.
Add remaining sauce items, cover and cook for 20 minutes on low simmer
Add basil at end, wilt and serve
