Shrimp Biscuit Melts

2 pound Shrimp (peeled and deveined)
1 cup Shredded Cheddar Cheese (or mozzarella)
4 ounces Cream Cheese (low-fat optional)
1/4 cup Mayonnaise (or Greek yogurt)
1 tablespoon Dijon Mustard (or yellow mustard)
1 teaspoon Old Bay Seasoning (or seasoned salt)
1 teaspoon Garlic Powder (or fresh garlic)
1/2 teaspoon Black Pepper (to taste)
1 can Refrigerated Biscuit Dough (or homemade dough)
2 tablespoons Butter (melted, or olive oil)
1 tablespoon Fresh Parsley (optional)
Directions
Preheat oven to 375°F (190°C).
In a mixing bowl, combine shrimp, lump crab meat, cheddar, cream cheese, mayonnaise, Dijon mustard, Old Bay, garlic powder, and black pepper.
Open the biscuit dough and separate each biscuit. Flatten to about ¼ inch thick.
Place a generous spoonful of filling in the center of each biscuit disc.
Fold the dough over the filling to create a half-moon shape and seal tightly.
Place on a parchment-lined baking sheet and brush with melted butter.
Bake for 15-20 minutes until golden brown.
Allow to cool slightly and garnish with fresh parsley before serving.
