Italian Ricotta Spinach Meat Pie

Italian Ricotta, Spinach and Ground Beef Pie

Leave out the meat if you wish!!

2 sheets puff pastry, thawed

3 tablespoons olive oil

2 cups ricotta cheese

Handful or two of spinach, steamed or frozen. If frozen, thaw and drain

½ tsp each salt and black pepper or spice as you wish

1 pound lean ground beef sautéed in olive oil and onion. Make sure to spice this portion as you wish

1 cup or so ready made tomato sauce.

1 cup shredded mozzarella cheese

1 egg, beaten for egg wash

Directions

Preheat oven to 375°F. Coat your springform pan with olive oil

Unfold pastry sheets and roll out; use both to line the bottom and side of the springform pan. Overlap the pastry on the bottom of pan.

Mix ricotta with spinach and add salt and pepper. Combine until smooth.

Start layering: First the ricotta mixture. Then the sautéed ground beef. Top with tomato sauce. Sprinkle with shredded mozzarella.

Fold over the sides of the puff pastry dough to the top and brush with beaten egg.

Bake for 35 minutes or until golden brown. Remove the rim. Cool 15 minutes. Cut and serve.
