Homemade Ketchup

3 tbsp celery seeds
4 tsp whole cloves
2 cinnamon sticks broken into chunks
1 1/2 tsp whole allspice
3c apple cider vinegar
24 lbs tomatoes, cored and quartered
3 c onions chopped
1 tsp cayenne pepper
1 1/2 c sugar
1/4 c pickling salt
Put spices in spice bag. Combine vinegar and spice bag in a saucepan and bring to a boil. Remove and let stand 25 minutes. Discard spice bag.
Meanwhile in large saucepan combine tomatoes, onions, & cayenne. Bring to boil. Reduce and simmer for 20 minutes. Add infused vinegar and simmer another 30 minutes.
Run sauce theough a sieve or food mill to remove seeds and skins.
Return the liquid to saucepan. Add sugar and salt. Bring to boil. Reduce heat and simmer uncovered until liquid is reduced by half, about 45 minutes to an hour.
Store in the fridge or water bath can.
