Mashed Parsnips

Ingredients

10 parsnips, peeled and cubed

1 teaspoon salt, or more to taste

1 cup whole milk

¼ cup butter

1 teaspoon dried thyme

½ teaspoon ground black pepper, or more to taste

Directions

Gather all ingredients.

Pour water into a large pot over medium-low heat; bring to a simmer. Add parsnips and salt. Cover and cook until parsnips are tender, 25 to 30 minutes.

Drain parsnips.

Mash together parsnips, 1 cup warm milk, butter, thyme, and pepper in the same pot using a hand mixer or blender. Add more warm milk until desired consistency is reached. Season with salt and pepper.
