Slow Cooker Beef Ragu

Ingredients

This is my melt in your mouth Slow Cooker Beef Ragu, the ultimate comfort food to warm you up on a rainy evening. Best served with pappardelle and a nice glass of red wine. Lets go:

Ingredients: Serves 4 (489 calories and 32.6g protein per serving)

1 onion

1 large carrot

3 celery sticks

600g beef skirt or flank

5 garlic cloves

2 tbsp tomato pure

1 400g can chopped tomatoes

100ml red wine

50ml beef stock

1 tbsp Italian seasoning

2 bay leaves

1 tbsp cornflour

1 tsp olive oil

Directions

On a medium heat add 1 tsp olive oil to a pan, add the beef to the pan along with 1 tbsp cornflour. Sear on both sides until lightly brown then remove from the pan.

Add the beef to the slow cooker along with the rest of the ingredients season well with salt and pepper then cook on low for 8 hours.

Shred the beef 10 minutes before serving, garnish with parmesan and serve with fresh pappardelle pasta or creamy mash. Enjoy!
