Blueberry Almond Cottage Cheese Breakfast Bake

Ingredients

1 cup cottage cheese (small curd)

3 large eggs

1/4 cup maple syrup or honey

1 teaspoon vanilla extract

1/2 teaspoon almond extract

1 cup rolled oats

1/2 cup almond flour

1 teaspoon baking powder

1/4 teaspoon salt

1 cup fresh or frozen blueberries

2 tablespoons sliced almonds (optional topping)

Directions

Preheat your oven to 350°F (175°C). Lightly grease a small baking dish.

In a bowl, whisk together the cottage cheese, eggs, maple syrup, vanilla, and almond extract until mostly smooth.

Stir in the oats, almond flour, baking powder, and salt until combined.

Gently fold in the blueberries.

Pour the mixture into the prepared baking dish and spread it out evenly.

If you're using sliced almonds, sprinkle them on top.

Bake for 30–35 minutes, or until the center is set and the top is lightly golden.
