Crispy Potato Pancakes

Ingredients

1 Kg / 2.2 Lbs Potatoes (starchy or All-purpose)

1 small onion

2 eggs

1–2 tbsp / EL flour or cornstarch

½ tsp / TL salt

A pinch of freshly ground pepper

Neutral oil for frying (rapeseed or sunflower)

Directions

Peel and finely grate potatoes and onion.

Place in a clean kitchen towel and squeeze out excess liquid.

Mix grated potatoes with eggs, flour, salt and pepper until combined.

Heat oil in a pan; add 1–2 tbsp of batter and flatten slightly.

Fry 3–4 minutes per side until golden and crisp.

Drain on paper towels — crispy outside, soft inside.

Serve with applesauce and enjoy warm. 🍎🤍
