Ingredients

16oz. dried black beans (sorted for rocks, etc..)

1/2 vidalia onion (2 quarters)

3" knob ginger (diagonal rough sliced in ~3-4 pieces)

6 cloves garlic (crushed)

1-3 bay leaves

6c. chicken bone broth

Directions

After sorting and rinsing beans, soak overnight (~8-10 hours). Change out water and rinse once or twice and let sit in new water if going longer than 10 hours. (personally, not sure if I'd go longer than 12 hours)

Final rinse, and dump in instant pot. Add aromatics & liquid, seal cooker, and cook for ~30-40 minutes, letting it release naturally.

Remove aromatics, and pulse a few times with immersion blender (being careful not to splash hot liquid).
