Tricky Melon

Melon is always very annoying, hence why I don't use it often. But sometimes you have to push through to hopefully learn something new.
Melon Cordial *
Chop a melon into lots of small pieces and blend until smooth
Strain through a sieve, and weigh your resulting liquid then add 0.2% Pectinex. (E.g. 500g Melon juice, 1g pectinex)
stir and let sit for 2 hours then filter through cheesecloth/paper towels
Remedies!
Directions
Add 3/4 of the weight of your liquid in sugar (e.g. 500g Melon juice, 375g sugar)
Add 5% of Citric acid (e.g. 500g Melon juice, 25g Citric acid)
Heat almost until boiling then remove from heat (If you want to make this in batches, this is when you can vac bag the liquid and save it for later)
Add neutral alcohol like vodka
Add mint to cold liquid for 10-15 minutes to mask aroma
As I said, this is great on first taste. Definitely sour melon vibes. But this experiment is all about time, so I'll check back in a few days.
