High Protein Orzo Salad With Chicken

Ingredients

2 zucchini - sliced in pieces of about 0.5 inch (1.5 cm) thick

8 cups (240 g) baby spinach

3 cups (560 g) orzo - cooked

4 cups (800 g) beluga lentils - cooked

2 avocado - diced

400 g cherry tomatoes - chopped in half

8 walnuts - chopped

salt and pepper to taste

DRESSING

1 cup (24 g) fresh basil

2 tbsp (30 ml) olive oil

4 tbsp (60 ml) lemon juice

2 garlic cloves

0.25 cup (30 g) walnuts

Directions

Add a tsp of oil and the zucchini slices to a pan on medium heat. Grill each side for 2 to 3 minutes for an even cook.

Prepare the Walnut Pesto Dressing: blend together the basil, olive oil, lemon juice, garlic clove, and walnuts.

In a large serving bowl, combine the spinach, orzo, beluga lentils, avocado, tomatoes, grilled zucchini, walnuts. Drizzle the dressing. Adjust salt and pepper to taste and enjoy!
