The Bear Spaghetti

Ingredients

1 pound spaghetti

28 oz can San Marzano tomatoes

Large yellow onion

5 cloves garlic

Large handful basil

1/2 cup olive oil

1/2 stick butter

1/2 tsp red pepper flakes

Directions

Combine olive oil, smashed garlic cloves, red pepper flakes, and basil in saucepan. Turn the heat to medium low. Once at a boil, let simmer for 1-2 minutes. Remove from heat and allow to steep.

Peel onion and cut in half through the root. Melt half stick of butter and 1 tbsp of oil over medium heat. Once butter is starting to brown, place onion halves in pot cut side down. Sear for 2-3 minutes.

Add canned tomatoes to butter. Break up tomatoes. Once boiling, turn heat to low and simmer for 25 minutes.

Once basil oil is cool, blend/chop until smooth and puréed. Combine with tomato sauce for last 10 minutes of cooking.

Toss spaghetti in sauce with a little bit of pasta water.
