Crispy Air Fried Gnocchi

- 500g packet gnocchi 
- 4 slices bacon 
- Half tin of sweetcorn 
- 1 red onion 
- 2/3 tbsp Green pesto (mixed with a little red wine vinegar) 
- Parmesan to serve 
- Coat gnocchi in olive oil, smoked paprika, garlic flakes and salt. 
Directions
- Air fry at 200c for 18 mins, skate halfway through. 
- Slice bacon into small pieces and fry until crispy. 
- Cube your onion and fry in the bacon fat along with your sweetcorn until onion is cooked and sweetcorn is slightly charred. 
- Once finished in the air fryer, add your gnocchi to the onion and sweetcorn and mix together. 
- Serve with a few dollops of green pesto (pre-mix a couple of tablespoons of pesto with a small amount of red wine vinegar and salt beforehand) and top with grated Parmesan.
