Paav Bhaji

Ingredients

2 tbsp butter

2 tsp oil

1 tsp jeera/cumin seeds

One and a half chopped onions

6 pods minced garlic

1in minced ginger

4 minced green chilies

OR 2-2.5 tsp ginger garlic paste

3-4 tomatoes OR 1 can diced tomatoes with one fresh tomato

1/4 tsp turmeric powder

2 tsp salt, add more to taste if necessary

1/2 tsp red chili powder

1 tsp coriander powder

1/2 tsp Kashmiri chili powder later with other spices

1 tbsp paav bhaji masala (ready made)

2 carrots

1 bell peppers

1 cup cauliflower

1/2 cup peas

4-5 peeled potatoes (either pre-boiled or add straight into instapot)

Serve with lemon wedges and minced onion

Directions

  1. Add butter and oil to instapot

  2. Add in jeera seeds once butter/oil is warm and allow to simmer for a few seconds

  3. Add in onions, garlic, ginger, chilies and allow onions to cook for a few minutes (see options below)

Option 1: Using raw garlic, ginger, chilies

  • 6 pods minced garlic + 1in minced ginger + 4 minced green chilies (or 2-2.5 tsp ginger garlic paste), allow to simmer then add onions

  • Then add 1/2 tsp Kashmiri chili powder later with other spices

Option 2: Garlic, ginger, chili paste

  • Blend ginger, garlic, green chilies first with very little water to create a paste and add in before the onions, be careful to not let the paste burn

Option 3: Garlic, ginger, green and Kashmiri chili paste

  • Soak Kashmiri chilies in warm water for 30 mins then strain and add ginger, garlic, green chilies and blend with very little water to create a paste and add in after the onions

  1. Add in fresh or canned tomatoes

  2. Immediately after adding tomatoes add in salt, turmeric powder, coriander powder, red chili powder, paav bhaji masala, and Kashmiri chili powder (if not added into garlic/ginger blend previously)

  3. Allow tomatoes and onions to cook with spices for 5-7 minutes

  4. Add in carrots, cauliflower, peas, bell pepper, and potatoes one at a time (add in peeled, uncooked potatoes if using instapot, otherwise peel and boil potatoes and add in after all the other vegetables cook together for 10 minutes)

  5. Close the instapot and allow it all to cook for 10 minutes

  6. Mash the cooked vegetable bhaji until you achieve correct consistency

  7. Serve with lemon wedges and minced onion
