Salsa de Aguacate (Avocado Salsa)

Ingredients

6 cloves garlic, peeled

½ white onion, roughly chopped

2 serrano chiles, roughly chopped (or jalapeños if you prefer less spicy)

5 ripe tomatillos, quartered

Juice of 2 limes

Bunch of cilantro, leaves and tender stems, roughly chopped (about ½ cup packed)

1 ripe avocado

Salt, to taste

2 tbsp avocado oil

Directions

Add the garlic, onion, serrano chiles, tomatillos, lime juice, cilantro, and avocado to a blender.

Blend on low speed, gradually increasing to high, until the mixture turns a smooth, uniform color.

With the blender still running, add a teaspoon of salt.

Once smooth and uniform, drizzle in the avocado oil to help emulsify.

Taste and add more salt as needed.
