Portuguese Rice

1/4 c olive oil
3 cloves garlic, minced
1 small white onion, finely chopped
1 can petite diced tomatoes (do not drain)
2 c long grain rice
3 c chicken stock
½ bunch parsley chopped
1/4 c white wine
coarse salt & ground pepper
3-5 splashes of red wine vinegar
Directions
In a medium sauce pot heat the olive oil and sauté onion and garlic until lightly golden. Add white wine and tomatoes and let simmer for 8 minutes. Add pinch of coarse sea salt. Add in the rice and parsley. Mix really well together. Add all the chicken stock, stirring to combine. Cover and simmer on low to medium heat for about 16 minutes. Shut off the heat and let carry over for 2 minutes. Fluff the rice with a fork, season with salt and pepper if needed. Add a few splashes of red wine vinegar, fluff a little more and serve.
