Carrot Salad

3 carrots, peeled
Dressing
1 tbsp vinegar (you can use either black vinegar or rice vinegar here)
1 tbsp lime juice
2 tsp soy sauce
1 tbsp sesame oil
2 tsp maple syrup
Pinch of sea salt
Dash of pepper
1 tsp toasted sesame seeds
2 stalks green onion, thinly sliced
Optional: Chilli oil/crisp
Directions
Use your peeler to create long thin carrot strips.
Add all of the dressing ingredients into a bowl and whisk well to combine.
Add in the carrots and toss well. Serve immediately or cover and sit in the fridge for an hour or even overnight. Enjoy!
