Preheat oven to 400F

Boil noodles for 12 minutes in salt water.

Drain and rinse with cold water.

Put oil in a casserole dish in the oven until the oil bubbles.

Meanwhile, when noodles are drained, add salt, pepper, and 2 eggs. (If you use the whole box of noodles. Otherwise, if you only use 1/2 box, use 1 egg). Mix well and pour into the heated oil.

Bake for one hour.

Notes

This one is fairly similar to the recipe she verbally told me in November of 2023.

There are slight changes, in that she gave a bit more detail to quantities. The recipe she said was:

Noodle Kugel

-You'll need ~900grams of broad flat noodles, 2 eggs, salt, pepper, and a 9x13" pyrex dish

-Boil noodles until soft in salted water.

-While water is boiling/noodles are cooking, preheat oven to 400F. Prepare the pyrex dish with enough oil to coat the bottom, but not enough to be a thick layer. Put the dish in the oven while it's heating up.

-Drain and rinse with cool water. Once rinsed, season with 1tbsp salt, a bunch of pepper, and 2 whole beaten eggs. Mix well.

-Dump the noodle mixture into the pyrex dish with the hot oil. It will splatter a bunch at you.

-Cook for 1 hour.

-Let sit for 5 minutes before cutting and serving.
