1 large tortilla

2 teaspoons olive oil

2 large eggs or 3 medium

1/3 cup cottage cheese

1/3 cup shredded mozzarella cheese

1/3 cup chopped & cooked turkey bacon

Kosher salt and ground pepper to taste

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

Optional:

1 tablespoon fresh chopped parsley

Directions

Bake at 350F for 13-15 mins or until the egg sets.
