Chocolate Veggie Muffins

Ingredients

2 eggs

1 banana

1 cup grated carrots

1 cup loosely packed spinach

1 cup courgette

1/4 cup avocado oil

1/4 cup milk

1/3 cup honey

1 tsp vanilla extract

1 1/4 self raising flour

1/3 cup cocoa

1/4 cup chocolate chips

Directions

1. Preheat oven to 180C fan forced. Spray a muffin tin.

2. In a blender, blend together the veggies and wet ingredients.

3. In a separate bowl, mix together all the dry ingredients. Add the wet mixture to the bowl and mix until combined.

4. Spoon mixture into muffins tins and top with extra choc chips if you like.

5. Bake for 20 mins or until skewer comes out clean.
