Ingredients
Cup measurement: 200 ml
I made 20 from this amount.
500 g flour (4 cups)
300 ml water (1.5 cups)
20 g granulated sugar (1 tablespoon)
80 ml olive oil (8 tablespoons)
12 g salt (1 heaping teaspoon)
10 g powdered yeast (If you're making the dough overnight, use half the amount. You can shape it the night before and bake it in the morning.)
For the Filling
100 g cottage cheese
100 g cream cheese
Parsley, 2 tablespoons milk
Mash everything together until it's soft (add sucuk (Turkish sausage) if you like. π)
100 g cheddar cheese (For topping)
For the Dough
30 g grape molasses (2.5 tablespoons)
60 ml water (6 tablespoons)
1 egg white
All Whisk in the toasted sesame seeds (I didn't measure π₯²)
Preparation
Place the flour in a mixing bowl, make a well in the center, add the yeast, granulated sugar, and warm water, and let the yeast activate for about 5 minutes. After the time is up, add the remaining ingredients and knead the dough (until it's smooth. Every flour has its own characteristics; if it's too hard, add a little water, if it's too soft, add a little flour). Let the dough rise. Once the dough is done, divide the dough into 20 equal pieces. First, dip the sesame seeds in the molasses water, then the sesame seeds. Let the dough rise again. (Average: 15-20 minutes, but if you want to make it overnight, the time may be longer.) Then, shape it as shown in the video. (Because it's yeasted, it will clump back together, so press the center twice with a glass.) Add the cheddar cheese and press down on the center.
