Peanut Butter Bars

These bars kinda made me famous. I’ve brought them to so many parties I should start charging admission.

For the Bars:

¾ cup butter (room temp)

½ cup granulated sugar

1 cup light brown sugar

2 large eggs

1 tsp vanilla

½ cup creamy peanut butter

2½ tsp baking soda

½ tsp salt

1½ cups all-purpose flour

2 cups old-fashioned oats

Filling + Frosting:

Additional peanut butter (to spread on top)

¼ cup butter

1 Tbsp cocoa powder

1½ Tbsp milk

1¼ cups powdered sugar

1 tsp vanilla

Directions

Prep: Preheat oven to 350°F. Grease a 9Ɨ13’’ pan.

Mix Wet: Cream butter + sugars. Add eggs, vanilla, and peanut butter.

Mix Dry: In another bowl, stir flour, oats, baking soda, and salt.

Combine: Mix dry into wet. Press into pan.

Bake: 17–21 min, just until set in center. Cool completely.

Peanut Butter Layer: Spread a thin layer of creamy PB over cooled bars.

Frosting: Melt butter, whisk in cocoa. Remove from heat, add milk, powdered sugar, and vanilla. Beat smooth and spread over bars.

To Store:

Refrigerate up to 1 week

Freeze up to 3 months (thaw in fridge, then room temp before serving)
