1 cup cherry tomatoes
2 tablespoons parsley, roughly chopped
2 tablespoons blanched hazelnuts, roughly chopped
Zest 1/4 lemon
1 tablespoon olive oil
Preheat oven to 400 Fahrenheit. Place the tomatoes and sausages into a small roasting dish, drizzle with the olive oil all over and season with salt and pepper. Place in the oven for 25 minutes.
Mix the parsley, hazelnuts, and lemon zest together.
When the sausages are cooked, serve the dish and scatter the parsley and hazelnut mixture all over.
