Creamy Parmesan Italian Sausage Soup Recipe

1 lb Italian sausage (mild or spicy)
1 tbsp olive oil
1 onion, chopped
3 cloves garlic, minced
4 cups chicken broth
1 can (14.5 oz) diced tomatoes
1 cup heavy cream
2 cups spinach, chopped
1/2 cup Parmesan cheese, grated
1 tsp dried oregano
1/2 tsp red pepper flakes (optional)
Salt and pepper to taste
Directions
Heat olive oil in a large pot, add sausage, and cook until browned. Remove and set aside.
In the same pot, sauté onion until softened, then add garlic and cook for 1-2 minutes.
Add chicken broth and diced tomatoes, bring to a boil, then reduce to a simmer for 10 minutes.
Stir in heavy cream, spinach, Parmesan, and sausage. Simmer until spinach wilts, 5-10 minutes.
Season with salt and pepper. Serve hot with extra Parmesan on top.
