Passover Matzoh Icebox Cake

Chocolate Ganache

2 ½ cups semi sweet chocolate chips

1 cup whipping cream

1 tsp espresso powder

½ tsp salt

Whipped Cream

3 cups cold whipping cream

½ cup + 1 Tbsp powdered sugar

1 tsp vanilla extract

2 tsp espresso powder

¾ tsp cinnamon

1 cup brewed coffee (decaf or caf)

6-7 sheets of matzah

Garnish

Shaved chocolate

Chopped hazelnuts

Directions

Make the ganache: put chocolate chips in a bowl, heat whipping cream to a simmer, pour it over chocolate chips, add in espresso powder, salt. Mix until smooth.

Make whipped cream: combine all ingredients in a stand mixer or use electric hand mixer, beat 2-5 min. until stiff peaks form.

Place parchment paper in an 8 x 8 pan and smear some chocolate ganache on the bottom.

Pour coffee into a dish, quickly dip matzah, then place in 8 x 8 pan on top of ganache.

Then layer chocolate ganache, whipped cream, matzah (that’s been dipped in coffee), repeat for 6 or 7 layers. Top layer is just coffee-soaked matzah.

Wrap up, place in fridge overnight.

Before serving, swirl whipped cream, shaved chocolate, chopped hazelnuts on top.
