2 tablespoons honey
2 tablespoons Dijon mustard
2 tablespoons white balsamic vinegar (or cider vinegar)
2 tablespoons extra virgin olive oil
1 tablespoon tamari or soy sauce
1 clove garlic, minced

Directions
Prepare the Peaches
Grill the peaches for a few minutes on each side for a smoky flavor, or simply dice them fresh.
Blend Everything Together
In a blender or food processor, combine the peaches, honey, Dijon mustard, white balsamic vinegar, olive oil, tamari (or soy sauce), garlic, salt, and pepper. Blend until smooth and creamy.
Adjust the Consistency
If the vinaigrette is too thick, add a splash of water or extra vinegar until you reach your desired consistency.
Store and Serve
Transfer the vinaigrette to an airtight container and refrigerate. While it’s ready immediately, letting it sit for an hour will deepen the flavors.
