Neapolitan Cake

Ingredients

1 pkg yellow cake mix

1 c water

¼ c oil

3 eggs

8 to 10 drops red food coloring

¼ c chocolate syrup

1 tbls cocoa

confectioners’ sugar, optional

Directions

In a large bowl, combine the cake mix, water, oil and eggs. Beat on low speed for 30 seconds; beat on medium for 2 minutes.

Divide batter into three equal portions.

Pour one portion into a greased and floured 10 in fluted tube pan. Stir red food coloring into second portion; carefully spoon into pan. Stir chocolate syrup and cocoa into third portion; carefully spoon into pan. Do not swirl.

Bake at 350° for 40 – 45 minutes or until a toothpick inserted near the center come out clean.

Cool for 10 minutes before removing from the pan to a wire rack to cool completely.

Dust with confectioners’ sugar if desired.

Rather than use food coloring, Karen used red gelatin.
