Cottage Cheese & Spinach Crustless Quiche 🥧

1½ cups cottage cheese (preferably full-fat for creaminess)
4 large eggs
1 cup sautéed spinach and chopped onion (use 1 small onion, finely diced)
½ cup shredded mozzarella cheese
A pinch of ground nutmeg
¼ tsp sea salt (or to taste)
¼ tsp black pepper
Optional: 1 tbsp chopped fresh dill or parsley
Olive oil for greasing
Directions
1. Preheat oven to 375°F (190°C). Lightly grease a pie dish or small baking dish with olive oil.
2. Sauté the vegetables:
Heat a drizzle of olive oil in a skillet over medium heat.
Add the chopped onion and cook until translucent (about 4–5 minutes).
Add spinach and cook until wilted. Let cool slightly.
3. Mix the filling:
In a large mixing bowl, whisk the eggs until blended.
Add cottage cheese, sautéed spinach and onion, mozzarella, nutmeg, salt, pepper, and fresh herbs (if using).
Stir until well combined.
4. Bake:
Pour mixture into the prepared baking dish.
Bake for 35–40 minutes or until the center is set and the top is lightly golden.
5. Cool and serve:
Let cool for 5–10 minutes before slicing.
Serve warm or at room temperature.
