Chocolate Banana Oat Flour Muffins

Ingredients

3 medium bananas, mashed (about 1 cup)

2 eggs

1/3 cup oil (e.g., coconut oil or avocado oil)

1/3 cup maple syrup

1 tsp vanilla extract

1 1/2 cups oat flour

1/4 cup + 2 tbsp cocoa powder

1 tsp baking soda

1/4 tsp salt

1/2 cup chocolate chips

How to make it:

Directions

Preheat your oven to 350°F (175°C). Line a muffin pan with muffin liners.

In a large bowl, mash the bananas, then whisk in the eggs, oil, maple syrup, and vanilla extract until smooth.

In a separate bowl, mix the oat flour, cocoa powder, baking soda, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the chocolate chips.

Divide the batter evenly among the muffin liners.

Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
