Grits & Sausage Casserole

2 lbs Pork Sausage
3 c Water
4 tbs Unsalted Butter
1 c Quick Grits
1/2 tsp Salt
3 Eggs
1 1/2 c Whole Milk
1/2 tsp Black Pepper
1/2 tsp Garlic Powder
8 oz Extra Sharp Cheddar Cheese, shredded, (divided)
Directions
Preheat oven to 350°F.
Brown pork sausage in a large skillet over medium heat. Drain well in a colander and set aside until ready to use.
Place water and butter in a medium saucepan, set over high heat, and bring to a boil. Add the grits and salt. Stir to remove any lumps, and replace the lid on the pot. Reduce heat to low and simmer for five minutes. Remove the lid and stir the grits. Remove from the heat and set aside until ready to use.
In a small bowl, add the milk, eggs, black pepper, and garlic powder. Then use a small whisk to combine.
In a large bowl, add the sausage, cooked grits, 6 ounces of shredded extra-sharp cheddar cheese, and the milk and egg mixture. Use a large wooden spoon or silicone spatula to stir everything together.
Spray a large 9x13 casserole dish with non-stick cooking spray and pour the mixture into the dish. Bake uncovered in a 350°F oven for 1 hour.
Remove from the oven and top with the remaining 2 ounces of shredded extra sharp cheddar cheese. Return to the oven and bake for an additional 15 minutes.
Remove from the oven and allow to cool for 5-10 minutes before serving.
