1/2 cup unsalted butter
A sprinkle of salt
4 cups powdered sugar (divided)
1/2 tsp vanilla bean paste or vanilla extract
A few drops of peppermint oil or 1/2 tsp peppermint extract
1 tbsp heavy cream
Food coloring (whatever colors you want!)
How to:
Directions
In a bowl add softened butter and sprinkle of salt. Mix it all up. Next add 2 cups powdered sugar, heavy cream, and vanilla bean paste and mix. Add peppermint flavor and mix. Add 2 more cups of powdered sugar and mix. It will be crumbly at this stage. Using your hands knead until play dough consistency. Next dye whatever color you want using food coloring! I divided the dough into thirds and used red & green and left the last one white.
Next year, going to roll it on a parchment line pan into a thin log. Cut into whatever sizes you want. I use smaller cuts for thin mints.
This makes an entire baking sheet of mints!
