Carrot Cake Oatmeal Cream Pie Cookies

Ingredients

A soft chewy carrot cake oatmeal cookie sandwiched together with a sweet vanilla cream cheese frosting !

1/2 cup unsalted butter softened

½ cup brown sugar

½ cup granulated sugar

2 tsp bourban vanilla bean paste

1 egg

1 cup all purpose flour

¼ teaspoon baking soda

½ teaspoon baking powder

1 tsp cinnamon

1 cup old fashioned rolled oats

3/4 cup finely grated carrots
