Quick Pickled Bell Peppers
Here’s how to make them:
2 medium-sized bell peppers, sliced
2 tbsp rice vinegar
2 tbsp soy sauce or coconut aminos
1 tbsp sesame oil
1 clove garlic, grated
½ - 1 tsp chili flakes or chili oil (optional)
Sesame seeds + green onion to finish
Pack the peppers tightly into your mason jar. Add the rest of the ingredients. Chill in fridge for 20 minutes - if you can stand to wait!
Bell peppers are the PERFECT veggie for pickling, the flesh soaks up the flavors and this gets better and better with everyday in the fridge.
