Simple Aldi Brisket

Brisket (this time it was 1.8kgs)

4x Carrot

7x Potato (any potatoes for roasting, this time I bought Chipping)

Directions

1. Preheat oven to ~130 celsius on broiler setting (11 o'clock, the wavy line + fan) for 30 minutes.

2. Drizzle 1tbsp olive oil onto a baking tray. Put brisket in, fat-side up. Cook it at 130 celsius for (2.5 * its weight in kgs). For my 1.8kg brisket, I cooked for 4.5 hours. Wrap the baking tray in foil.

3. When you hit 30 minutes left until it's finished cooking, start boiling water. Peel carrots and potatoes - I used 7 medium sized potatoes and 4 carrots, which would be enough for 4 vegetable portions. I should have probably boosted it to 10 potatoes/8 carrots though.

4. Par boil potatoes for ~10 minutes (or when you can pierce them with a fork). Once they're done, pour out the water, drizzle 1tbsp olive oil into the pot directly, and shake the pot up to get them fluffy.

3. After 4.5 hours, take it out of the oven. Add in the vegetables, change the heat to 200 celsius.

4. After ~15 minutes, take the brisket out of the oven and let it rest. Move the vegetables around now that there's more space - ensure they're coated in the oil/fat.

5. After ~40 minutes (total ~55 minutes), take the vegetables out of the oven.

2.08kg brisket, cooked for about 5 hours @ 130 + 15 mins @ 200. it was a little bit overcooked. also cooked 1.4kgs potatoes, ~7 carrots and 2 onions at 200 for roughly 45 mins, tossing every 15 minutes - this was about the maximum i could fit into the pan.
