Creamy Feta & Roasted Red Pepper Chicken

Ingredients

1 tablespoon olive oil

1/2 onion, diced

4 clove garlic, minced

1/2 pound cauliflower florets

12 ounce jar roasted red peppers, drained

2 pound chicken breasts

1 1/2 teaspoon paprika

1 teaspoon oregano

1 1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes

2 cup chicken broth

1 cup spinach, chopped

3/4 cup feta, crumbled

8 ounce cream cheese

1 lemon, juiced

Rice

Directions

Heat a large pot over medium heat with olive oil. Add onions and garlic and sauté for 3 minutes.

Add cauliflower, red peppers, chicken, seasonings, and broth, ensuring everything is fully submerged. Bring to a simmer & cover. Simmer for 10-15 minutes, until chicken is cooked through.

Shred the chicken and add spinach, feta, cream cheese, and lemon juice. Simmer for 5-10 more minutes to allow liquid to thicken
