1 lb Pasta, cooked al denté (save 1/4 c pasta water)
4 TBSP Butter
3-4 Cloves Garlic, grated
1 C Heavy Cream
1/2 C Pumpkin Purée
1 ½ C Freshly Grated Pecorino Romano Cheese
1 tsp Fresh Sage, finely chopped
1/2 tsp Black Pepper
1/2 tsp Salt
How To:
Bring a salted pot of water to a boil and cook pasta while preparing your sauce.
Directions
Add butter to your skillet and grate in 3-4 cloves of garlic. Combine.
Add heavy whipping cream & pumpkin purée. Whisk until combine, smooth & creamy.
Whisk in grated cheese until melted and smooth. Add sage, salt & pepper.
Stir in cooked pasta + 1/4 C reserved pasta water. Combine & top with extra grated cheese! Enjoy!
