Orange Cashew Chicken And Rice

1 cup instant brown rice
1 can mandarin oranges (11 oz)
¼ cup cashews
¼ cup chicken broth
2 tbsp soy sauce
2 tbsp teriyaki sauce
¾ pound chicken breast
½ cup bok choy
¼ cup minced chives
Directions
L1. Cook rice according to package instructions. Meanwhile, drain oranges, reserving 2 tablespoons juice.
2. In a small bowl, combine the cashews, broth, soy sauce, teriyaki sauce, and reserved juice;
set aside.
3. In a large skillet, fry chicken until no longer pink.
4. Add cashew mixture and cook for 1 minute. Add the bok choy, chives, and oranges and cook for an additional 2 minutes.
5. Serve over rice.
