Slow Cooker Thai Chicken Noodles

* 4 cups chicken stock
* 400ml coconut milk
* 1/4 cup soy sauce
* 2 tablespoon smooth peanut butter
* 1/4 cup Thai red curry paste
* 2 tablespoon fish sauce
* 2 tablespoon honey
* 1 tablespoon sesame oil
* 2 large skinless chicken breast
* 1 red capsicum chopped
* 1 teaspoon minced ginger
* 2 teaspoon minced garlic
* 4 serves of noodles (I used Singapore noodles)
* 250g baby spinach chopped
* 1/3 cup fresh coriander, chopped
* chopped peanuts for serving
Directions
In slow cooker, add chicken stock, coconut milk, soy sauce, peanut butter, curry paste, fish sauce, honey, sesame oil, chicken, capsicum, ginger and garlic. Cover and cook on on high for 4 hours.
* Remove chicken. Add to slow cooker noodles, spinach and coriander. Let sit for 4 to 5 minutes or until noodles are soft. Shred chicken. Add back to slow cooker & stir. Serve immediately and top with peanuts.
