Crispy Soba Noodle Cabbage Salad

Ingredients

1 small green or purple cabbage (~5 cups)

2 bunches green onions, sliced

1/2 cup slivered almonds

1 cup cooked soba noodles (1 bundle)

1 tsp sesame oil

1 tb low sodium soy sauce

Dressing

3 tb sesame oil

3 tb avocado oil

1/3 cup rice vinegar

1/3 cup low sodium soy sauce

3 tb honey (or maple syrup)

1/4 cup sesame seeds

1/2 tsp ground black pepper

Directions

Preheat oven to 375F. Bring a pot of water to a boil. Once the water is boiling, break the soba noodles into small pieces and add to the water. After four minutes or once the noodles have cooked, drain, removing as much water as possible. Transfer to a parchment lined baking sheet and coat well with the sesame oil and soy sauce. Bake for 15 to 16 minutes, tossing at the halfway point to ensure that everything browns evenly and gets crispy. Remove from the oven. Next, make the dressing. Add all of the dressing ingredients to a bowl and whisk together well. Taste and adjust as needed. Finally, shred cabbage very thin with a mandolin and add to a large bowl along with the sliced onions, slivered almonds and crispy soba. Pour the dressing on top, toss to coat very well and enjoy!
