Gooey High-Protein Cinnamon Rolls

Ingredients
• 1 cup warm unsweetened almond milk
• 1 packet (2¼ tsp) active dry yeast
• 2 tbsp granulated sweetener (or regular sugar)
• 2 egg whites
• ¾ cup nonfat Greek yogurt
• 2 cups white whole wheat flour (or all-purpose for softer texture)
• ½ cup vanilla protein powder (whey works best for texture)
• ½ tsp salt
• 1 tsp vanilla
Gooey Cinnamon Filling
Ingredients
• ¼ cup brown sugar (or brown sugar substitute)
• 1½ tbsp cornstarch
• 1½ tbsp unsweetened applesauce
• 1 tbsp almond milk
• 1½ tbsp cinnamon
• Pinch salt
Mix into a thick paste.
Protein Cream Cheese Glaze
Ingredients
• ½ cup nonfat Greek yogurt
• 2 tbsp whipped light cream cheese
• 1 scoop vanilla protein powder
• Sweetener to taste
• Splash almond milk to thin
Whip until smooth.
Directions
Instructions
1. Bloom yeast in warm milk + sweetener (5-10 minutes until foamy).
2. Mix in egg whites, yogurt, vanilla.
3. Add flour, protein powder, and salt. Knead 5-7 minutes.
4. Let rise 60 minutes until doubled.
5. Roll into rectangle.
6. Spread filling evenly.
7. Roll tightly and cut into 9 rolls.
8. Place in pan. let rise 20-30 minutes.
