Mexican Cauliflower Bowl

Ingredients

Head of Cauliflower

Olive Oil

~3 Tbsp Nutritional Yeast

~2 Tbsp Ground Cumin

~3 Tbsp Garlic Powder

~2 Tbsp Smoked Paprika

Sliced Jalapenos

½ to 1 diced red onion

Can of black beans

Diced Tomato

Avocado

Buffalo sauce

Feta Cheese (optional)

Directions

Preheat oven to 425

Cut cauliflower into bites, put into 9x13 pan

Drizzle with olive oil, add nutritional yeast, ground cumin, garlic powder, and smoked paprika mix well

Place into oven for 30 minutes

Add sliced jalapenos, diced red onions, and black beans. Put back in the oven for about 10 more minutes

Top with diced tomatoes, avocado, buffalo sauce, and feta cheese
