Garlic-parmesan Roasted Cabbage Skillet! This One Takes 10 M

1 small/medium cabbage, sliced into 1/3 inch thick rounds
1 cup freshly shredded Parmesan cheese, plus more for garnish
3 tbsp olive oil, plus more for the pan
1/4 cup finely chopped scallions
4 cloves minced garlic
1/2 tsp salt, divided, plus more for the pan
Pepper to taste
Juice of 1/2 lemon
1/2 cup water or broth
1 tbsp chopped fresh parsley
2 tbsp chopped walnuts
Directions
Preheat the oven to 425.
Make the topping. Add the Parmesan, olive oil, garlic, scallions, 1/4 tsp salt, pepper to taste and lemon juice to a medium bowl. Mix to make a paste.
Drizzle some olive oil on to the bottom of a skillet and brush to coat. Sprinkle with a generous amount of salt. Add any loose pieces of the cabbage to the bottom of the pan. Place the cabbage rounds in an overlapping pattern into the pan. Sprinkle the tops of the cabbage with another 1/4 tsp salt.
Spoon the Parmesan mixture over the tops of the cabbage, until the surface area is mostly covered and you have used the entire mixture. Pour the water into the bottom of the pan. Cover the pan with a cover or aluminum foil, then place it in the oven for 45 minutes. After 45 minutes, remove the cover and bake for another 20-25 minutes, until the edges are browned. Optionally, place the cabbage under the broiler for 2 minutes after it is done baking to brown the tops.
Top the cabbage with more Parmesan, the parsley and the walnuts. Add salt and pepper to taste, if desired.
