Peanut Noodles With Crispy Halloumi

Ingredients

8 oz noodles

1/2 cup creamy peanut butter

1/3 cup tamari or soy sauce

2 tbsp honey

1/4 cup Thai red curry paste

1 tbsp fresh ginger, grated

2 carrots, shredded

2 bell peppers, thinly sliced

1 tbsp sesame oil + 1/4 cup sesame oil

8 oz halloumi cheese, cubed and patted dry

6 cloves garlic, chopped

1/2 cup fresh basil, chopped

1/2 cup fresh cilantro, chopped

2 green onions, thinly sliced

3 tbsp toasted sesame seeds

3 tbsp chopped peanuts

2 tbsp lime juice

Directions

1. Boil salted water, cook noodles as directed, then drain. Toss with carrots and bell peppers.

2. Blend peanut butter, soy sauce, honey, red curry paste, ginger, and water until smooth. Toss sauce with noodles.

3. Cook halloumi in sesame oil until golden, about 5 minutes. Set aside.

4. In the same skillet, heat sesame oil and garlic until crispy. Add chili flakes.

5. Toss halloumi with garlic oil, cilantro, basil, peanuts, and sesame seeds. Drizzle with lime juice.

6. Serve noodles topped with halloumi and extra chili oil.
