Seafood Pot Pie

1 lb medium shrimp (deveined, tail off)
1 lb crab meat
Olive oil for cooking
1 red bell pepper, chopped
1 green bell pepper, chopped
1/2 onion, chopped
3 tbsp butter
3 tbsp flour
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
Salt and pepper to taste
1 1/2 cups chicken broth
1 cup heavy whipping cream
1 package of biscuit mix
Directions
Preheat the Oven: Preheat your oven according to the biscuit mix package instructions, usually around 400°F (200°C).
Cook the Shrimp and Crab:
In a large skillet, heat a drizzle of olive oil over medium heat.
Add the shrimp and cook for about 3-4 minutes, or until they turn pink. Remove the shrimp from the skillet and set aside.
If using whole crab meat, you can add it here too for a short heat just to warm through, then remove it with the shrimp. Otherwise, you can add it back later with the shrimp.
Sauté Vegetables:
In the same skillet, add a bit more olive oil if needed, and then add the chopped onion, red bell pepper, and green bell pepper. Sauté until the vegetables are soft, about 5-7 minutes.
Make the Roux:
After sautéing the veggies, add the butter to the skillet and let it melt. Then whisk in the flour to create a roux, cooking for about 1-2 minutes until it turns a light golden color.
Add Seasonings:
Stir in the garlic powder, onion powder, paprika, salt, and pepper. Mix well to combine all flavors.
Prepare the Sauce:
Gradually pour in the chicken broth, whisking continuously to prevent lumps.
After the broth is fully incorporated, add the heavy whipping cream. Stir until the mixture is smooth and begins to thicken, about 3-5 minutes.
Combine Everything:
Return the sautéed shrimp and crab meat back to the skillet with the vegetable and sauce mixture. Stir to combine all the ingredients and simmer for an additional 2-3 minutes. Taste and adjust seasonings if needed.
Prepare the Biscuit Topping:
Prepare the biscuit mix according to the package instructions. This usually involves mixing the biscuit mix with water or milk until combined.
Assemble the Pot Pie Bowls:
Divide the shrimp and crab mixture among individual oven-safe bowls or ramekins.
Top each bowl with a spoonful of the biscuit mixture, ensuring it covers the seafood mixture.
Bake:
Place the bowls in the preheated oven and bake according to the biscuit mix package instructions, usually 12-15 minutes, or until the biscuit topping is golden brown and cooked through.
Serve:
