Broadbeach Noodle Curry

16 frozen dumplings
10g minced garlic
10g minced ginger
2 tbsp yellow curry paste
1 tsp curry powder
400ml coconut milk
1 tsp soy sauce
1 tsp white sugar
1 tsp fish sauce
1–2 heads bok choy, roughly chopped
Chilli oil, to serve
Directions
Preheat oven to 200°C (fan-forced).
In baking dish add garlic, ginger, curry paste, curry powder, coconut milk, soy sauce, sugar, and fish sauce and stir until smooth.
Place the bok choy and stir through, then add the frozen dumplings.
Cover loosely with foil and bake for 30 minutes or until the dumplings are cooked through.
Drizzle with chilli oil, spring onions and sesame seeds and dig in!
